Rhubarb & Yoghurt Fool
10 ozs unsweetened stewed Rhubarb
2 ozs icing Sugar
8 ozs Greek style Yoghurt
1 egg – white only.
Mix Rhubarb, icing Sugar, yoghurt & cinnamon together.
Whip egg white until it stands in peaks. Fold into above mixture. Chill until
Serve with Almond biscuits.
Not crazy about rhubarb and don’t like yogurt. But love sugar, cinnamon and eggs. That’s 3 to 2. I’ll try it!
Try cooking the rhubarb in lemonade, it will not be so tart in taste.

My mom use to stew rhubarb. I loved it.
You will find rhubarb growing in most Irish gardens. It made regular appearances at our table, stewed, with ice cream or custard, in pies and crumbles or as above.

Make rhubarb compote with ginger all the time. I can only have a little as I don’t do sugar, this is a lovely recipe. With oatmeal it could be a crumble baked in the over. H’m….. 😀
